  • 1/2 cup diced onion
  • 1/4 cup diced green pepper
  • 1 lb. ground beef
  • 1 (28 oz.) can tomatoes
  • 1 tsp. salt
  • 1/2 tsp. sugar
  • 1/4 tsp. thyme
  • 1 1/3 cups Minute rice
  • 1 small bay leaf

Instructions

  1. Melt margarine in a skillet over medium heat.
  2. Add diced onion, diced green pepper, and ground beef.
  3. Cook, stirring often, until the meat is browned.
  4. Spoon off excess fat.
  5. Drain the tomatoes, measuring the juice. Add water to the juice to make 1 1/2 cups.
  6. Add the tomato juice mixture, tomatoes, salt, sugar, thyme, and bay leaf to the ground beef mixture.
  7. Bring to a boil, then reduce heat and simmer.
  8. Add the Minute rice, stir well, cover, and cook until rice is tender, about 5-10 minutes.

Tips & Substitutions

For a richer flavor, consider adding a pinch of smoked paprika or cayenne pepper to the beef mixture. If you don't have Minute rice, you can use regular long-grain rice, but adjust the cooking time accordingly. You can also substitute ground beef with ground turkey or chicken for a lighter option. To enhance the dish, try adding some cooked sausage or shrimp, reminiscent of classic Jambalaya.

Serving Suggestions

Serve the Jambalaya-Spanish Rice hot, garnished with fresh parsley or green onions for a pop of color. It pairs beautifully with a side salad or crusty bread to soak up the flavorful juices. For a complete meal, consider serving it alongside a light coleslaw or roasted vegetables to balance the richness of the dish.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water or broth to the skillet over low heat, stirring occasionally until heated through. You can also microwave individual portions, covering them to retain moisture.

Frequently Asked Questions

Can I make this dish vegetarian?

Absolutely! You can replace the ground beef with a mix of sautéed mushrooms, zucchini, and bell peppers for a hearty vegetarian option. Use vegetable broth instead of the tomato juice mixture to enhance the flavor. This substitution maintains the dish's integrity while accommodating dietary preferences.

How can I adjust the spice level of this recipe?

To adjust the spice level, consider adding diced jalapeños or a dash of hot sauce to the meat mixture. If you prefer a milder version, omit the bay leaf and keep the seasonings light. You can always serve hot sauce on the side for those who enjoy a kick!

Can I freeze Jambalaya-Spanish Rice?

Yes, this dish freezes well! Allow it to cool completely, then transfer it to freezer-safe containers. It can be frozen for up to 2-3 months. When ready to eat, thaw in the refrigerator overnight and reheat on the stovetop or in the microwave, adding a little water to maintain moisture.
