  • 6 oz. medium egg noodles, uncooked

Instructions

  1. Cut bacon into 1-inch pieces.
  2. Fry bacon until crisp, then remove and set aside.
  3. Saute chopped onion, parsley, and ground beef in bacon drippings until beef is browned.
  4. Skim off excess fat.
  5. Add tomatoes in puree, water, salt, oregano, red pepper, and pepper to the beef mixture.
  6. Cover and simmer for 10 minutes.
  7. Bring to a full boil, then add noodles a few at a time.
  8. Reduce heat and simmer for 10 minutes, stirring occasionally, until noodles are tender.
  9. Transfer to a serving dish and sprinkle cooked bacon on top.
