Ingredients

  • 2 cups grated zucchini
  • 3 teaspoons vanilla
  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • 1 cup chopped nuts
  • 3 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Stir to blend thoroughly.
  4. Break eggs into a mixer bowl and beat well.
  5. Add vanilla, then oil, then sugar, and mix well.
  6. Add grated zucchini and mix until combined.
  7. Gradually add the flour mixture and blend well.
  8. Stir in chopped nuts.
  9. Divide batter evenly into three 1 1/3-cup loaf pans.
  10. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
