Ingredients

  • 2 (10-inch) deep pan pie crusts
  • 2 pkg. frozen spinach
  • 1 lb. ham
  • 1 pkg. Swiss cheese
  • 1 carton (2 cups) half and half
  • fresh mushrooms
  • 6 eggs
  • 6 tsp. flour

Instructions

  1. Divide the ingredients in half to prepare two pies.
  2. Cook the frozen spinach and drain well.
  3. Cut the ham into chunks.
  4. Place Swiss cheese in the bottoms of the pie crusts.
  5. Add spinach, mushrooms, and ham on top of the cheese in each crust.
  6. Beat eggs, half and half, salt, pepper, and flour together until well combined.
  7. Pour the egg mixture evenly over the filled pies.
  8. Sprinkle shredded Cheddar cheese over the tops of the pies.
  9. Bake at 350°F for 55 minutes until golden and set.
  10. Enjoy one pie now and freeze the other for later.
