Ingredients

  • 2 lb. fresh green beans
  • 1/2 c. chopped onion
  • 1/4 c. butter
  • 3 Tbsp. all-purpose flour
  • 1 Tbsp. sugar
  • 1 1/4 c. milk
  • 1 c. sour cream
  • 3 Tbsp. minced fresh parsley
  • 3 Tbsp. white vinegar
  • 6 bacon strips
  • salt and pepper to taste

Instructions

  1. Place green beans in a large saucepan and cover with water. Bring to a boil.
  2. Cook uncovered for 8 to 10 minutes or until crisp-tender.
  3. Meanwhile, in a separate saucepan, sauté chopped onion in butter until softened.
  4. Stir in flour and sugar, cook for 1 minute.
  5. Gradually whisk in milk and cook until thickened.
  6. Remove from heat and stir in sour cream, minced parsley, and white vinegar.
  7. Crumble cooked bacon strips and add to the sauce.
  8. Drain green beans and add them to the sauce, tossing to coat.
  9. Season with salt and pepper to taste and serve hot.
