Ingredients

  • 2 c. vanilla wafer crumbs
  • 6 Tbsp. melted margarine
  • 1 (14 oz.) pkg. Kraft caramels
  • milk
  • 1 c. chopped toasted pecans
  • 3 (8 oz.) pkg. cream cheese
  • 1 c. sugar
  • 3 eggs
  • 1 c. sour cream
  • 1 tsp. vanilla
  • 6 oz. chocolate chips
  • 1/4 c. whipping cream

Instructions

  1. Toast the pecans by placing them in the oven at 350°F for 10 to 15 minutes.
  2. Combine the vanilla wafer crumbs and melted margarine to form the crust and press into a 9-inch springform pan.
  3. Melt the caramels with enough milk to make a creamy consistency.
  4. Pour the caramel mixture over the crust.
  5. Add the toasted pecans on top of the caramel layer.
  6. Beat the cream cheese with the sugar until smooth.
  7. Add the eggs, one at a time, beating well after each addition.
  8. Mix in the sour cream and vanilla until combined.
  9. Pour the cream cheese filling over the caramel and pecans in the crust.
  10. Bake at 325°F for 1 hour and 20 minutes.
  11. Allow the cheesecake to cool completely.
  12. Melt the chocolate chips with the whipping cream and spread over the cooled cheesecake as a topping.
