J.C.'S Vegetable Soup
Ingredients
- 2 turnips
- 3 large potatoes ⓘ
- 1 large onion ⓘ
- 1/4 head cabbage ⓘ
- 4 small carrots ⓘ
- 3 celery stalks ⓘ
- 3 cans (15 oz.) mixed vegetables ⓘ
- 2 cans chicken broth
- 1 (10 3/4 oz.) can tomato soup ⓘ
- 1 1/2 qt. tomatoes ⓘ
- 1 1/2 lb. ground beef ⓘ
- 1 1/2 lb. soup meat ⓘ
- 3/4 c. macaroni, uncooked ⓘ
- 1/2 c. broken spaghetti, uncooked ⓘ
- 3 bay leaves ⓘ
- 1 tsp. Cajun seasoning
- 1/2 c. rice, uncooked ⓘ
- 1/2 tsp. parsley
- 1/2 tsp. garlic powder ⓘ
Instructions
- Cook soup meat in about 2 quarts of water until tender.
- Add ground beef and diced vegetables adding more water as needed. Cook until almost done.
- Add all other ingredients and let simmer until macaroni is cooked.
- Be sure and use a large soup kettle. Makes enough for company.
