Ingredients

  • 1/2 cup chicken jelly
  • 1 hard-cooked sliced egg
  • 1 teaspoon cooked peas
  • 2 ounces cooked diced chicken
  • 1/2 teaspoon minced parsley

Instructions

  1. Slightly grease a custard cup and place the hard-cooked egg slices in the bottom.
  2. Sprinkle minced parsley on the sides of the cup.
  3. Pour 1/4 cup of the chicken jelly into the cup and chill.
  4. Stand the large slices of egg against the sides of the cup and place smaller slices in the center.
  5. Mix the cooked diced chicken and cooked peas with the remaining chicken jelly.
  6. Pour the mixture into the cup on top of the egg slices.
  7. Chill until the jelly is firm.
  8. Unmold the jellied chicken and serve on a lettuce leaf with desired garnishes.

Tips & Substitutions

To enhance the flavor, consider using homemade chicken jelly if available. If you don't have chicken jelly, turkey jelly or even vegetable gelatin can work as substitutes. Ensure the jelly is well-chilled before using, as this will help it set properly. For added texture, you could fold in some finely chopped celery or bell pepper into the chicken and pea mixture.

Serving Suggestions

Serve the jellied chicken on a crisp lettuce leaf for a refreshing contrast. It pairs well with a side of Herb Crescent Rolls for a complete meal. Consider adding a tangy vinaigrette or some sliced pickles to the plate for added flavor. This dish can also be enjoyed as part of a buffet spread or picnic.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. If you need to reheat, gently warm the jellied chicken in the refrigerator before serving. Avoid microwaving, as it can cause the jelly to break down and lose its texture.

Frequently Asked Questions

Can I use fresh chicken instead of cooked chicken?

Fresh chicken should be cooked before using in this recipe. Poaching or roasting the chicken until fully cooked ensures a safe and flavorful result. After cooking, allow it to cool before dicing and mixing with the jelly.

What can I use instead of parsley?

If you don't have parsley, fresh dill or chives can be excellent substitutes. They will add a different flavor profile while still providing a fresh taste. Dried herbs can also be used, but reduce the amount as they are more concentrated.

Is this dish suitable for meal prep?

Yes, jellied chicken can be made ahead of time and stored in the refrigerator. It's a great option for meal prep as it holds well and can be served cold. Just make sure to keep it tightly sealed to maintain freshness.
