Ingredients

  • 2 pkg. plain gelatin
  • 1 c. cold water
  • 2 c. boiling water
  • 1/2 c. cooked shrimp
  • 4 c. mashed avocado
  • 1/4 c. lemon juice
  • 1 tsp. salt

Instructions

  1. Soften the gelatin in cold water and then dissolve it in boiling water.
  2. Pour a small amount of clear gelatin into the bottom of a mold; arrange cooked shrimp in it and chill until firm.
  3. Mash the avocados with lemon juice, then add salt and the remaining dissolved gelatin.
  4. Pour the avocado mixture on top of the shrimp layer in the mold.
  5. Chill until the entire mixture is firm.
  6. Unmold the salad onto a serving dish.
  7. Garnish with lettuce, tomato, and cucumber wedges.
  8. Serve with mayonnaise.

Tips & Substitutions

To enhance flavor, consider adding diced tomatoes or jalapeños to the avocado mixture. If you prefer a smoother texture, blend the avocado instead of mashing. For a twist, substitute shrimp with crab or use vegan gelatin for a vegetarian version. Ensure the gelatin is fully dissolved to avoid lumps in the salad, and chill the mold for at least 4 hours for best results.

Serving Suggestions

Unmold the salad onto a serving platter and garnish with fresh lettuce, tomato, and cucumber wedges for a colorful presentation. This dish pairs beautifully with mayonnaise for dipping and can be served alongside a light seafood dish like Seafood Bake for a refreshing meal.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 2 days. To maintain texture, avoid freezing as the gelatin may separate. If the salad becomes too firm, let it sit at room temperature for about 10 minutes before serving to soften slightly.

Frequently Asked Questions

Can I use other types of seafood in this salad?

Yes, you can substitute the shrimp with crab meat or even diced smoked salmon for different flavors. Just make sure any seafood used is cooked and cooled before adding to the salad.

What can I use instead of gelatin?

If you're looking for a vegetarian option, agar-agar is a great substitute for gelatin in this recipe. Follow the package instructions for the correct ratios, as it sets differently than traditional gelatin.

How long does this salad need to chill?

The salad should chill for at least 4 hours, or until it is firm. For best results, prepare it a day in advance to allow the flavors to meld and the gelatin to fully set.
