Ingredients

  • 3 garlic cloves, minced
  • 2 Tbsp vegetable oil
  • 2 to 2 1/2 lb ground round steak
  • 3 large onions
  • 2 large green peppers
  • 6 cups tomatoes
  • 1 or 2 cans pinto beans, drained
  • 6 oz tomato paste
  • 2 or 3 Tbsp chili powder
  • 2 dashes cayenne pepper
  • 2 whole cloves
  • 1 bay leaf
  • salt and pepper to taste
  • rice (optional)

Instructions

  1. Cook garlic in vegetable oil until golden.
  2. Crumble ground round into pieces and cook for 10 minutes, breaking it up to brown evenly.
  3. Pour off some oil and drippings into another skillet and cook sliced onions and green pepper until tender.
  4. Add cooked onions and peppers to the ground round.
  5. Stir in tomatoes, pinto beans, tomato paste, chili powder, cayenne pepper, cloves, bay leaf, salt, and pepper.
  6. Cover and cook over low heat for one hour.
  7. If too dry, add additional tomatoes.
  8. If too much liquid, uncover and simmer longer.
  9. Serve over rice if desired.
