Ingredients

  • 1 (1 oz.) pkg. Hidden Valley Ranch dry salad dressing mix
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 (9-inch) pan Tex-Mex cornbread, crumbled
  • 2 (16 oz.) cans pinto beans, drained
  • 3 large tomatoes, chopped
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped green onion
  • 2 cups (8 oz.) shredded Cheddar cheese
  • 10 slices bacon, cooked and crumbled

Instructions

  1. Combine the dry salad dressing mix, sour cream, and mayonnaise in a bowl; set aside.
  2. Place half of the crumbled cornbread in the bottom of a large serving bowl.
  3. Top with half of the drained pinto beans.
  4. In a medium bowl, combine chopped tomatoes, chopped green pepper, and chopped green onion.
  5. Layer half of the shredded Cheddar cheese, crumbled bacon, corn, and the prepared salad dressing over the layers.
  6. Repeat the layers with the remaining ingredients.
  7. Garnish as desired.
  8. Cover and chill the salad for 2 to 3 hours before serving.
