- Two to four days before serving, combine cider vinegar, red wine, water, peppercorns, sugar, onions, bay leaves, mustard seed, salt, and cloves in a large bowl.
- Place the meat in this marinade and let stand for 2 to 4 days, covered, in the refrigerator, turning it each day.
- At the end of marinating, remove the meat and dry it on paper toweling.
- Brown the meat well on all sides in shortening in a Dutch oven.
- Strain the marinade and add it to the Dutch oven with the meat.
- Add as much of the onions as you can separate, along with mustard seed, cloves, and peppercorns.
- Cover and simmer for 3 1/2 to 4 hours or until the meat is tender.
- Remove the meat to a heated platter and serve.
