Ingredients

  • 1 1/2 cups cider vinegar
  • 2 cups red wine
  • 1 cup water
  • 12 peppercorns
  • 2 tablespoons sugar
  • 2 medium onions peeled and sliced
  • 4 bay leaves
  • 1 teaspoon mustard seed
  • 2 teaspoons salt
  • 12 whole cloves
  • 4 pounds round rump or cross rib beef
  • 1/4 cup shortening

Instructions

  1. Two to four days before serving, combine cider vinegar, red wine, water, peppercorns, sugar, onions, bay leaves, mustard seed, salt, and cloves in a large bowl.
  2. Place the meat in this marinade and let stand for 2 to 4 days, covered, in the refrigerator, turning it each day.
  3. At the end of marinating, remove the meat and dry it on paper toweling.
  4. Brown the meat well on all sides in shortening in a Dutch oven.
  5. Strain the marinade and add it to the Dutch oven with the meat.
  6. Add as much of the onions as you can separate, along with mustard seed, cloves, and peppercorns.
  7. Cover and simmer for 3 1/2 to 4 hours or until the meat is tender.
  8. Remove the meat to a heated platter and serve.
