Ingredients

  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup plain non-fat yogurt
  • 1/4 cup finely diced onion (optional)
  • 1/4 cup finely diced bacon or ham

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine cornmeal, baking powder, bicarbonate of soda, and salt.
  3. In a separate bowl, beat the egg and then mix in the yogurt.
  4. Add the egg and yogurt mixture to the dry ingredients and stir until just combined.
  5. Fold in the diced onion and bacon or ham.
  6. Pour the batter into a greased baking dish or skillet.
  7. Bake until golden brown and a toothpick inserted in the center comes out clean, about 20-25 minutes.
  8. Allow to cool slightly before serving.
