Ingredients

  • 1 1/2 c. cornmeal
  • 2 eggs
  • 1/2 c. Crisco oil
  • 1 c. sour cream
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 Tbsp. green chili peppers
  • 1 can cream-style corn
  • 8 oz. grated Cheddar cheese

Instructions

  1. Mix all of the ingredients except the cheese well.
  2. Pour half of the mixture into a hot iron skillet.
  3. Sprinkle the grated Cheddar cheese evenly over the mixture in the skillet.
  4. Pour the remaining batter over the cheese layer in the skillet.
  5. Bake at 450°F for 30 minutes until golden and cooked through.
