Ingredients

  • 6 oz. uncooked elbow macaroni
  • 1/2 lb. extra lean ground beef
  • 1/2 green pepper, chopped
  • 1 small onion, chopped
  • 1 (8 oz.) can tomato sauce
  • 1 (16 oz.) can tomatoes
  • 2 oz. low-fat Cheddar cheese, cut into pieces
  • 1/2 tsp. chopped garlic
  • 1/4 tsp. salt
  • 1/2 tsp. chili powder
  • 1 (4 oz.) can chopped mushrooms, drained

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook macaroni according to package directions; drain.
  3. Spray a skillet with a non-stick coating.
  4. Add ground beef, chopped green pepper, chopped onion, and chopped garlic; sauté until tender.
  5. Add tomato sauce, canned tomatoes, chopped mushrooms, salt, chili powder, and cooked macaroni; mix well.
  6. Pour the mixture into a casserole dish sprayed with non-stick coating.
  7. Bake, covered, for 35 to 40 minutes.
