Ingredients

  • 3 lb. fresh lean pork, diced
  • 6 medium onions, finely chopped
  • 2 Tbsp. shortening
  • 1 lb. egg noodles
  • salt
  • pepper
  • paprika

Instructions

  1. Fry the diced pork and finely chopped onions in shortening, stirring constantly until browned and cooked through.
  2. Meanwhile, boil the egg noodles in salted water until tender, then drain.
  3. Combine the cooked pork and onions with the drained noodles in a large mixing bowl.
  4. Add the cream of tomato soup and tomato juice to the mixture, stirring to combine.
  5. Season with salt, pepper, and paprika to taste.
  6. Pour the mixture into a baking dish, sprinkle with cheese, and spread evenly.
  7. Bake in a moderate oven (around 350°F or 175°C) for about an hour until bubbly and golden on top.
