Ingredients

  • 1 egg
  • 1/2 cup molasses
  • 2 tablespoons sugar
  • 1 1/4 cups buttermilk
  • 3 tablespoons shortening
  • 1 cup cornmeal
  • 1/2 cup flour
  • salt
  • 2 teaspoons baking powder

Instructions

  1. Preheat the oven and prepare a baking dish or skillet.
  2. In a mixing bowl, beat the egg.
  3. Add molasses or sugar and molasses to the egg and mix well.
  4. Stir in buttermilk.
  5. Melt shortening and add to the mixture.
  6. In a separate bowl, combine cornmeal, flour, salt, baking powder, and soda.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Pour the batter into the prepared baking dish or skillet.
  9. Bake until golden brown and a toothpick inserted in the center comes out clean.
