Sweet and wholesome sugarless fruit muffins combine ripe bananas, orange juice, and raisins for a naturally flavorful treat suitable for breakfast or snacks.

Ingredients

  • 6 oz. can orange juice concentrate, thawed
  • 2 large eggs
  • 2 large ripe bananas, mashed
  • 2 cups self-rising flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 4 Tbsp. raisins

Instructions

  1. Combine thawed orange juice concentrate, mashed bananas, and eggs in a bowl and beat until fluffy.
  2. In a separate bowl, stir together self-rising flour, baking soda, and cinnamon.
  3. Add the dry ingredients to the wet mixture and stir until just combined.
  4. Stir in raisins.
  5. Spoon the batter into 18 muffin cups lined with cupcake papers.
  6. Bake in a preheated 350°F oven for about 15 minutes or until a toothpick inserted comes out clean.
