Ingredients

  • 3 cups zucchini, sliced thin
  • 1 medium onion, finely diced
  • 1 1/2 cups Bisquick
  • 1/2 cup vegetable oil
  • 1/4 teaspoon pepper
  • 4 eggs, beaten
  • 1/2 cup Parmesan cheese
  • 1 teaspoon parsley flakes
  • 3/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine thinly sliced zucchini, diced onion, vegetable oil, Bisquick, beaten eggs, Parmesan cheese, parsley flakes, salt, and pepper; stir until all ingredients are well mixed and zucchini is evenly coated.
  2. Pour the mixture into a buttered baking dish or pie plate.
