Ingredients

  • 1 1/4 cups boiling water
  • 1 cup oats, uncooked
  • 1/2 cup margarine
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Pour boiling water over the oats and let stand for 20 to 30 minutes.
  2. Beat margarine, then add brown sugar and white sugar, and beat until well combined.
  3. Blend in vanilla and eggs, then stir in the soaked oats.
  4. Sift together flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry mixture to the creamed mixture, blending well.
  6. Pour the batter into a greased and floured 9-inch square pan.
  7. Bake in a 350°F (175°C) oven for 30 to 35 minutes until golden and a toothpick inserted in the center comes out clean.
