Juicy, tender brisket infused with garlic, carrots, and onions, glazed with horseradish and ketchup, perfect for hearty family dinners or special occasions.

Instructions
- Saute diced garlic clove in a pot and remove from heat.
- Place the brisket in the pot; add sliced carrots, sliced onions, and celery stalks.
- Spread horseradish over the brisket. Sprinkle with brown sugar; add 1 cup of consomme.
- Cover and roast in a 350°F oven for about 3 hours.
- Spread ketchup over the brisket, sprinkle with additional brown sugar, and brown at 450°F until caramelized.
- Allow the brisket to cool.
- Remove skin from fat, strain the sauce or process it in a processor.
- The brisket can be frozen for later use.
- Defrost, slice, and reheat before serving.
