A flavorful Indian-inspired rice casserole combining tender rice, tuna, mushrooms, and spices, topped with eggs and almonds for a hearty, savory dish perfect for family meals.

Ingredients

  • 1 cup hot drained boiled white rice
  • 2 tablespoons minced green pepper
  • whites of 2 hard-cooked eggs, diced
  • 1 (7 oz.) can tuna, flaked
  • 1/2 cup sautéed sliced mushrooms
  • 2 tablespoons minced pimiento
  • 2 cups curry sauce

Instructions

  1. Lightly toss all ingredients together with a fork except for the curry sauce.
  2. Gently blend the curry sauce into the mixture at the last.
  3. Pour the mixture into a buttered 12 x 7 1/2 x 2-inch baking dish.
  4. Sprinkle with sieved yolks of 2 hard-cooked eggs.
  5. Bake at 350°F (175°C) for 30 minutes.
  6. Just before serving, dribble melted butter over the top.
  7. Sprinkle with split salted almonds before serving.
