Curry-Shrimp Creole
A flavorful shrimp creole with aromatic curry and herbs, featuring tender shrimp in a rich tomato and vegetable sauce, perfect for a spicy, hearty meal.
Ingredients
- 2 medium onions, chopped ⓘ
- 1 medium green pepper, chopped ⓘ
- 1 stalk celery, chopped ⓘ
- 1 clove garlic, minced ⓘ
- 1 Tbsp. vegetable oil ⓘ
- 1 (16 oz.) can whole tomatoes, undrained and chopped ⓘ
- 1/4 c. fresh parsley, chopped ⓘ
- 1/4 c. catsup ⓘ
- 1 tsp. lemon juice ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. curry powder ⓘ
- 1/4 tsp. dried whole thyme, crushed ⓘ
- 1 lb. uncooked, cleaned shrimp ⓘ
- hot sauce to taste ⓘ
Instructions
- Saute onions, green pepper, celery, and garlic in oil until tender.
- Stir in chopped tomatoes, parsley, catsup, lemon juice, salt, hot sauce, curry powder, and thyme.
- Bring to a boil.
- Cover, reduce heat, and simmer for 30 minutes.
- Add shrimp.
- Cover and simmer for 5 minutes, or until shrimp turn pink.
- Serve over hot cooked rice.
