Ingredients

  • 2 lb. cooked shrimp
  • 2 Tbsp. butter
  • 1 small onion, chopped
  • 2 tsp. curry powder
  • 2 cans cream of shrimp soup
  • 2 c. sour cream
  • salt and pepper to taste
  • cooked rice
  • shredded coconut

Instructions

  1. In a double boiler, sauté onion and curry powder in butter until the onion is soft.
  2. Add the cream of shrimp soup and sour cream to the mixture.
  3. Simmer until heated through.
  4. Add cooked shrimp and cook briefly to combine flavors.
  5. Serve over cooked rice with condiments such as shredded coconut, chopped pecans, crisp bacon bits, raisins, and crystallized ginger.
