Ingredients

  • 1 (7 oz.) can tuna
  • 1 1/2 cups seasoned medium white sauce
  • 2 Tbsp. minced onion
  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. chopped celery
  • 1/2 cup olives (ripe or green)
  • 2 hard-cooked eggs
  • 1 1/2 tsp. curry powder
  • Steamed rice (4 to 6 servings)
  • Pimiento (optional)

Instructions

  1. Heat the tuna in the prepared white sauce.
  2. Add minced onion, chopped green pepper, and chopped celery to the mixture.
  3. Cut olives, remove pits, and add them to the mixture.
  4. Cube hard-cooked eggs and add to the mixture, then blend in curry powder.
  5. Serve hot over steamed rice and garnish with pimiento if desired.
