Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar
  • 4 eggs
  • 1 cup cooking oil
  • 2 cups shredded carrots
  • 1 can crushed pineapple (medium size)

Instructions

  1. Mix all dry ingredients together in a large bowl.
  2. Drain off 1/4 of the juice from the pineapple.
  3. Add the pineapple juice, eggs, cooking oil, shredded carrots, and crushed pineapple to the dry ingredients.
  4. Mix well until all ingredients are combined.
  5. Pour the batter into a greased and floured 9 x 13 inch pan.
  6. Bake at 350°F (175°C) for 40 minutes or until a toothpick inserted into the center comes out clean.
