Ingredients

  • 1 lb turkey or chicken cutlet
  • 1/2 cup flour
  • 1/4 cup Parmesan cheese
  • salt to taste
  • pepper to taste
  • paprika to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • garlic salt to taste
  • 1/4 cup Marsala wine
  • 2 tablespoons lemon juice

Instructions

  1. Pound the turkey or chicken cutlets thin with a mallet.
  2. Season the cutlets with salt, pepper, and paprika to taste.
  3. Mix flour and Parmesan cheese in a bowl.
  4. Dust the cutlets in the flour and Parmesan mixture.
  5. In a skillet, combine butter and olive oil over low-medium heat.
  6. Cook the cutlets on each side until golden brown.
  7. Mix the Marsala wine and lemon juice together.
  8. Pour the wine mixture over the cooked cutlets and simmer for 3 minutes.
  9. Serve the cutlets on a plate and pour the extra juice on top.
