Ingredients

  • 3 ripe avocados
  • 1 Tbsp lemon juice
  • 1 (12 oz) jar Old El Paso picante sauce
  • 1 (No. 10) can refried beans
  • 1 tsp baking soda
  • 1 pt Giant brand sour cream
  • 1 ripe tomato
  • 6 spring onions
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup shredded Jack cheese
  • 1/2 cup shredded Mozzarella cheese

Instructions

  1. Peel and mash avocados with lemon juice.
  2. Spread the mashed avocados in the bottom of a 9 x 13-inch glass pan.
  3. Spread picante sauce over the avocados.
  4. Mix refried beans with a few tablespoons of water until easy to spread.
  5. Add baking soda to the refried beans and mix well.
  6. Spread the refried bean mixture over the picante sauce.
  7. Vigorously stir sour cream to make a smoother consistency and spread over the refried beans.
  8. Sprinkle shredded Cheddar cheese and shredded Jack or Mozzarella cheese on top.
  9. Serve with taco chips.
