Ingredients

  • 1 c. chopped onions
  • 2 c. chopped celery
  • 2 Tbsp. butter, margarine or chicken fat
  • 1 (2 oz.) can chopped pimentos
  • 3 c. chopped, cooked chicken
  • 3 c. cooked rice cooked in chicken broth
  • 3/4 c. chicken broth
  • 1 (10 3/4 oz.) can condensed cream of mushroom soup
  • salt and pepper
  • 2 c. grated Cheddar cheese

Instructions

  1. Cook onions and celery in butter until tender, but not brown.
  2. Stir in chopped pimentos, cooked chicken, and cooked rice.
  3. Blend chicken broth and condensed cream of mushroom soup together.
  4. Stir the soup mixture into the chicken and rice mixture.
  5. Add salt and pepper to taste.
  6. Sprinkle grated Cheddar cheese on top and bake until cheese is melted and bubbly if desired.
