Ingredients

  • 2 1/2 (8 oz.) packages cream cheese, softened
  • 3/4 cup sugar
  • 1 cup sour cream
  • 3 tablespoons flour
  • 3 large eggs
  • 3/4 cup key lime juice
  • 1 teaspoon vanilla
  • 1 drop green food coloring

Instructions

  1. In a bowl with an electric mixer, beat together the cream cheese and sugar until smooth.
  2. Beat in sour cream, flour, eggs (one at a time), key lime juice, vanilla, and green food coloring.
  3. Beat until smooth.
  4. Pour the batter into the prepared crust.
  5. Bake in the center of a preheated 375°F (190°C) oven for 15 minutes.
  6. Reduce the oven temperature to 250°F (120°C) and bake for an additional 1 hour.
  7. Let cool on a rack, then chill, covered, overnight.
