Ingredients

  • 1 3/4 cups sugar
  • 1 cup butter or margarine
  • 2 eggs
  • 2/3 cup oil
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 tablespoons Key lime juice
  • Confectioners' sugar for sprinkling

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Cream together the sugar and butter until well combined.
  3. Add the eggs and oil to the mixture and beat well.
  4. In a separate bowl, combine the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture along with the Key lime juice, mixing until smooth and well combined.
  6. Roll the dough into small balls about 1 inch in diameter.
  7. Place the dough balls on an ungreased cookie sheet, spacing them about 2 inches apart.
  8. Using the bottom of a glass dipped into sugar, flatten each ball.
  9. Bake for 10 to 12 minutes or until lightly browned around the edges.
  10. Remove the cookies from the oven and immediately transfer to a wire rack.
  11. Dust the baked cookies with confectioners' sugar before serving.
