- Preheat oven to 375 degrees Fahrenheit.
- Cream together the sugar and butter until well combined.
- Add the eggs and oil to the mixture and beat well.
- In a separate bowl, combine the flour, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture along with the Key lime juice, mixing until smooth and well combined.
- Roll the dough into small balls about 1 inch in diameter.
- Place the dough balls on an ungreased cookie sheet, spacing them about 2 inches apart.
- Using the bottom of a glass dipped into sugar, flatten each ball.
- Bake for 10 to 12 minutes or until lightly browned around the edges.
- Remove the cookies from the oven and immediately transfer to a wire rack.
- Dust the baked cookies with confectioners' sugar before serving.
