Ingredients

  • 3 lb. chicken breast
  • 1 c. lime juice
  • 1 Tbsp. honey
  • 3/4 c. water
  • 1/2 tsp. pepper
  • 1/2 tsp. ground thyme
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. ginger

Instructions

  1. Combine lime juice, honey, water, pepper, ground thyme, vegetable oil, and grated ginger in a blender and blend well.
  2. Pour the marinade over the chicken breasts and cover. Marinate in the refrigerator overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and grill until cooked through, about 6-8 minutes per side.
  5. Garnish with cilantro and lime slices before serving.
