A hearty and flavorful kidney bean sauce with rich tomato and aromatic herbs, perfect for satisfying vegetarian or meat-eating families alike. Great over rice.

Ingredients

  • 1 lb dry kidney beans
  • 1 small can tomato paste
  • 1 small can tomato sauce
  • 3 onions
  • 4 cloves garlic
  • 1 small green pepper
  • 3 Tbsp oil
  • 1/2 tsp thyme
  • 4 cups water
  • pinch of sugar

Instructions

  1. Wash and soak the kidney beans overnight.
  2. In a medium-sized pot, add 4 cups water, oil, chopped onions, minced garlic, and salt. Bring to a boil.
  3. In a bowl, mix the tomato paste, tomato sauce, and 1/2 cup water until smooth.
  4. Add the tomato mixture to the pot and cook under medium heat for about 1 1/2 hours, until the beans are tender.
  5. Cut up the green pepper and thyme.
  6. Add the green pepper and thyme to the pot and let simmer.
  7. Add a pinch of sugar, if desired, and stir.
  8. Serve the kidney bean sauce over rice.
