Ingredients

  • cooked macaroni or spaghetti
  • 1 red pepper, cut and cleaned
  • 1 medium onion
  • 1 large clove garlic
  • 1/4 tsp. thyme
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1/4 c. chopped parsley
  • 1/4 c. soy or tofu milk
  • 1 1/2 c. water

Instructions

  1. Blend all ingredients except the parsley in a blender until smooth.
  2. Taste and adjust seasoning as needed.
  3. Mix the blended sauce with cooked macaroni or spaghetti.
  4. Garnish with chopped parsley before serving.
