Ingredients

  • Chinese napa cabbage
  • 1 to 2 fresh garlic cloves, chopped fine
  • 1 bunch green onions, chopped
  • vinegar
  • sugar
  • hot pepper
  • powdered cayenne

Instructions

  1. Chop the Chinese napa cabbage into bite-sized pieces and wash several times in a colander.
  2. Layer the cabbage with salt and seal, then set in the sun.
  3. Leave for 4 hours, tossing or turning upside down each hour.
  4. After 4 hours, the cabbage will dehydrate.
  5. Wash the cabbage thoroughly and add chopped green onions and garlic.
  6. Pour vinegar over the mixture and toss to combine.
  7. Sprinkle with cayenne powder, then add sugar and adjust seasoning to taste.
  8. Let the mixture sit in the refrigerator until ready to serve.
  9. Enjoy within several days for the best flavor.
