Ingredients

  • 1 1/2 cups milk
  • 6 tablespoons butter
  • pinch of salt
  • 2 scallions or 1/4 cup onion, chopped
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1 cup grated cheese
  • 1/2 cup biscuit mix
  • 3 eggs
  • 1 cup diced or ground leftover meat

Instructions

  1. Preheat the oven and prepare a baking dish.
  2. In a saucepan, melt butter and sauté chopped scallions or onion with a pinch of salt until tender.
  3. In a mixing bowl, whisk eggs and milk together.
  4. Add grated cheese, biscuit mix, cooked vegetables, and diced leftover meat to the egg mixture.
  5. Pour the mixture into the prepared baking dish.
  6. Bake until the quiche is set and golden on top, about 30 minutes.
