Ingredients

  • 1 cup raw rice
  • 1/2 cup red lentils
  • 1 cup cauliflowerets
  • 1 onion
  • 2 cloves garlic
  • 1/2-inch piece ginger
  • 1/2-inch piece green chili
  • 1/2-inch piece cinnamon stick
  • 1 teaspoon cumin seed
  • 1 teaspoon mustard seed
  • 1/4 teaspoon turmeric
  • butter

Instructions

  1. Soak the red lentils for 30 minutes.
  2. Heat oil and fry mustard seeds until they jump.
  3. Add cumin seeds, green chili, garlic, ginger, chopped onion, and cinnamon stick; cook for a few minutes.
  4. Add turmeric and cauliflower; cook for 10 minutes.
  5. Drain the lentils and add them to the pot with some butter; stir well.
  6. Add rice and water, then bring to a simmer.
  7. Cover and cook until the rice and lentils are tender, adding more water if needed.
  8. When almost done, add salt and cook a little longer.
  9. Optional: stir in lemon juice, chopped green coriander, and sweetened coconut before serving.
