Ingredients

  • 2 lb. mixed herbs (cilantro, spinach, parsley, dill, green onion ends, chopped garlic)
  • 4 Tbsp. cooking oil
  • 4 large eggs
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. wheat flour
  • 1 Tbsp. baking soda
  • 1 Tbsp. walnuts (optional)

Instructions

  1. Wash herbs thoroughly and rinse.
  2. Chop herbs finely.
  3. In a bowl, beat the eggs together.
  4. Add salt, black pepper, wheat flour, and baking soda to the eggs and mix well.
  5. Stir in the chopped herbs and crushed walnuts if using.
  6. Heat 2 tablespoons of cooking oil in a skillet over medium heat.
  7. Pour the herb mixture into the skillet and spread evenly.
  8. Cook until the bottom is golden brown, about 15 minutes.
  9. Flip carefully and cook the other side until golden and cooked through, about 15 minutes.
