Ingredients

  • 30 to 40 medium cucumbers
  • 3/4 cup sugar
  • 1/2 cup salt
  • 3 tablespoons pickling spice
  • 1 quart vinegar
  • 1 quart water
  • 1 head dill
  • 1 bay leaf
  • 1 clove garlic
  • 1 piece hot red pepper

Instructions

  1. Wash and cut cucumbers in half lengthwise; pack in hot jars with the dill, bay leaf, garlic, and hot red pepper.
  2. Combine sugar, salt, vinegar, and water in a saucepan.
  3. Tie pickling spices in a cheesecloth bag and add to the vinegar mixture.
  4. Simmer the mixture for 15 minutes.
  5. Bring the mixture to a boil and pour over the cucumbers, leaving 1/4-inch headspace.
  6. Adjust caps on the jars and process pints and quarts in a boiling water bath for 15 minutes.
