Ingredients

  • 10 large potatoes
  • 1 medium onion
  • 5 slices bacon
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup hot milk
  • 3 eggs

Instructions

  1. Peel and grate the potatoes and onion.
  2. Cut the bacon into pieces and fry until crisp.
  3. Pour the bacon fat over the grated potatoes and onion.
  4. Add hot milk to the mixture.
  5. Beat the eggs and add them one at a time to the mixture.
  6. Add salt and pepper.
  7. Pour the mixture into a greased 13 x 9-inch pan.
  8. Bake at 450°F for 15 minutes.
  9. Reduce oven temperature to 350°F.
  10. Continue baking for 1 hour.
  11. Serve with sour cream.
