Ingredients

  • 1 c. olive oil
  • juice of 2 lemons
  • 4 cloves garlic, crushed
  • 1/4 tsp. fresh ground pepper
  • 1 Tbsp. oregano
  • 1 Tbsp. Worcestershire sauce
  • 4 green onions, chopped fine
  • 4 lb. leg of lamb, boned and cut in 1 1/2-inch cubes

Instructions

  1. Combine all ingredients and marinate for at least six hours or preferably overnight.
  2. Put meat on oiled wooden or metal skewers.
  3. Set to grill over charcoal or gas grill, turning to brown evenly.
  4. If using a regular oven, turn on broil; put skewers on rack and broil 6 inches from the broiler, turning meat to brown.

Tips & Substitutions

For optimal flavor, marinate the lamb overnight to allow the spices to penetrate the meat. If you prefer a spicier kick, add a pinch of cayenne pepper or red pepper flakes. If fresh oregano is unavailable, dried oregano works well too, though you may want to use less as it's more concentrated. For a variation, try pairing with a yogurt sauce for dipping.

Serving Suggestions

Serve the lamb shish-kabobs with warm pita bread, a fresh Greek salad, or a side of Mediterranean rice. They pair beautifully with Souvlaki(Marinated Skewered Lamb) for a delightful feast. Consider adding tzatziki sauce or a tangy yogurt dip to complement the rich flavors. Grilled vegetables also make a great side dish.

Storage & Reheating

Store any leftover lamb shish-kabobs in an airtight container in the refrigerator for up to three days. To reheat, place them on a baking sheet and warm in a preheated oven at 350°F (175°C) for about 10-15 minutes. Alternatively, you can reheat them on the grill for a few minutes until heated through.
