A hearty quail casserole featuring tender quail simmered with eggplant, potatoes, peppers, and aromatic herbs, perfect for rustic family dinners or special gatherings.

Ingredients

  • 8 quail
  • 3 eggplant
  • 10 sweet peppers
  • 3 onions
  • 1 bulb garlic
  • 1 cup white wine
  • 1 pound potatoes
  • parsley
  • 2 bay leaves
  • peppercorns
  • salt

Instructions

  1. In an earthenware or heavy pot, arrange half of the eggplant, potatoes, garlic, peppers, and onions.
  2. Add the quail, then arrange the second half of the vegetables on top of them, along with bay leaves and parsley.
  3. Pour in white wine, season with pepper and salt, then cover all with tomatoes or tomato-based sauce.
  4. Add a little water, cover, and cook over low to moderate heat until the quail is tender.
