Ingredients

  • 12 lasagna noodles
  • 1 Tbsp. salad oil
  • 10 oz. frozen chopped broccoli, thawed and squeezed dry
  • 2 Tbsp. minced green onions
  • 15 oz. Ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp. salt
  • 1 (14 oz.) jar spaghetti sauce
  • 1 egg
  • 1 (4 oz.) pkg. shredded Mozzarella cheese

Instructions

  1. Cook the lasagna noodles as directed on the package.
  2. Meanwhile, in a 2-quart saucepan over medium heat, heat the salad oil and cook the broccoli and green onions until tender, about 5 minutes, stirring frequently.
  3. Remove the saucepan from heat and stir in the Ricotta cheese, Parmesan cheese, salt, and egg.
  4. Drain the cooked noodles and lay them flat on a clean surface.
  5. Spread a portion of the cheese mixture over each noodle and roll them up.
  6. Spread a thin layer of spaghetti sauce in a baking dish and place the rolled noodles seam-side down.
  7. Pour the remaining spaghetti sauce over the top and sprinkle with shredded Mozzarella cheese.
  8. Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes until bubbly and golden.
