Ingredients

  • 1/2 cup butter
  • 1 cup sliced fresh mushrooms
  • 1/2 cup slivered green pepper
  • 1/4 cup chopped onion
  • 1 clove garlic, crushed and chopped
  • 1 cup diced, seeded tomato
  • 2 tablespoons chopped parsley
  • 3/4 teaspoon dried oregano leaves, crushed
  • 6 ounces spaghetti
  • Salt and pepper

Instructions

  1. Melt butter in a medium frypan.
  2. Saute mushrooms, green pepper, onion, and garlic until tender.
  3. Add diced, seeded tomatoes, chopped parsley, and crushed oregano to the pan; heat through, stirring occasionally.
  4. Cook spaghetti according to package instructions, then drain.
  5. Spoon vegetable mixture over cooked spaghetti and toss well to coat.
  6. Add salt and pepper to taste.
  7. Sprinkle each serving with Parmesan cheese before serving.
