Ingredients

  • corn tortillas
  • fat-free refried beans
  • picante sauce
  • lettuce
  • tomato
  • low-fat cheese
  • jalapenos
  • onion

Instructions

  1. Preheat oven to 500° F.
  2. Place tortillas directly on the oven rack; heat until crisp, watching closely to prevent burning.
  3. Heat fat-free refried beans in the microwave until hot.
  4. Place a hot tortilla on a cookie sheet and spread the beans evenly on top.
  5. Sprinkle low-fat cheese over the beans.
  6. Bake in the oven until the cheese melts.
  7. Sprinkle shredded lettuce, chopped tomato, chopped onion, and jalapenos on top.
  8. Season with salt, pepper, and picante sauce.
  9. Enjoy!
