Creamy layered enchiladas packed with shredded chicken, green chiles, black olives, and melted cheese, perfect for a comforting Mexican-inspired meal that everyone will enjoy.

Ingredients

  • 2 chicken breasts
  • 3/4 cup black olives, sliced
  • 1/2 cup chicken broth
  • 4 1/2 oz. can diced green chiles
  • 14 oz. Old El Paso mild enchilada sauce
  • 8 corn tortillas
  • 1 1/2 cups Cheddar cheese, shredded
  • sour cream (garnish)

Instructions

  1. Use a 9 x 11-inch baking dish.
  2. Cover the bottom of the dish with 1/2 cup of enchilada sauce.
  3. Place 4 torn corn tortillas in the dish, covering the sauce.
  4. Spread shredded cooked chicken over the tortillas.
  5. Add chicken broth, 1/2 cup shredded cheese, diced green chiles, and 1/4 cup sliced black olives over the chicken.
  6. Top with the remaining torn tortillas, pour the remaining enchilada sauce over, then sprinkle with the rest of the cheese and black olives.
  7. Bake until bubbly and cheese is melted, about 20-25 minutes.
