A hearty layered casserole combining seasoned ground beef, potatoes, rice, and tomatoes with bold flavors, perfect for family dinners or casual gatherings.

Ingredients

  • 1 lb ground beef
  • 2 tsp chili powder
  • 1 tsp salt
  • 2/3 cup chopped onions
  • 2/3 cup chopped bell pepper
  • 2 or 3 potatoes, thinly sliced
  • 1 can tomatoes, cut up
  • 1/3 cup catsup
  • 1/3 cup water
  • black pepper
  • 1/3 cup raw rice

Instructions

  1. Place ground beef, chopped onions, and chopped bell pepper in a skillet.
  2. Brown the mixture over medium heat.
  3. Drain excess fat from the skillet.
  4. Add 1/2 teaspoon salt, chili powder, and black pepper to the meat mixture.
  5. Cover the bottom of a casserole dish with thinly sliced potatoes.
  6. Sprinkle rice evenly over the potatoes and add 1/2 teaspoon salt.
  7. Spread the cooked meat mixture over the rice layer.
  8. Pour the canned tomatoes evenly over the meat mixture.
  9. Mix catsup and water together.
  10. Pour the catsup and water mixture over the top of the casserole.
  11. Bake in a 350°F oven for 45 minutes until cooked through and bubbly.
