Ingredients

  • 2 (1 lb.) cans fat-free refried beans
  • 1/2 lb. ground turkey
  • 3 c. nonfat Mozzarella cheese
  • 1 c. grated nonfat Cheddar cheese
  • 1 (16 oz.) jar taco sauce
  • 4 oz. can chopped green chiles
  • 1 c. fat-free sour cream
  • 3 Tbsp. fat-free chicken broth
  • 1 large onion

Instructions

  1. Brown diced onion in chicken broth.
  2. Add cooked ground turkey to the onion and broth mixture.
  3. Stir refried beans into the turkey mixture.
  4. Spread the bean and turkey mixture into a 9 x 13-inch casserole dish sprayed with nonfat cooking spray.
  5. Sprinkle chopped green chiles over the top of the mixture.
  6. Spread half of the nonfat mozzarella cheese over the chiles.
  7. Pour taco sauce evenly over the cheese layer.
  8. Sprinkle remaining mozzarella and nonfat cheddar cheese on top.
  9. Bake at 400°F for 20 to 25 minutes until bubbly and cheese is melted.
  10. Cool slightly, then spoon nonfat sour cream in a cross pattern on top of the casserole.
  11. Serve with low-fat tortilla chips.
