Ingredients

  • 1 cup Bisquick
  • 1/4 cup milk
  • 2 eggs
  • 1/4 cup chopped onion
  • 1 (10 oz) package chopped spinach, thawed and drained
  • 1/2 cup Parmesan cheese
  • 4 oz Monterey Jack cheese, cut in 1/2-inch cubes
  • 12 oz cottage cheese
  • 1/2 teaspoon salt

Instructions

  1. Combine Bisquick, milk, eggs, and chopped onion in a bowl.
  2. Mix well and spread the batter in a greased 12 x 7-inch pan.
  3. Combine chopped spinach, Parmesan cheese, cubed Monterey Jack cheese, cottage cheese, and salt.
  4. Spoon the spinach and cheese mixture over the batter in the pan.
  5. Bake at 375°F for 30 minutes until golden and set.
