Ingredients

  • 4 large Idaho baking potatoes
  • 1 cup frozen broccoli
  • 1 cup frozen spinach
  • 1/2 cup sliced mushrooms
  • 1/2 cup finely chopped onions
  • 1/2 cup Dannon fat-free yogurt
  • 1/2 cup mozzarella cheese
  • 1/2 cup Colby-Jack cheese
  • 1/2 cup diced meat

Instructions

  1. Bake potatoes at 350°F for 1 hour after scrubbing and piercing with a fork, or wrap in paper towel and microwave for 10 to 12 minutes.
  2. Carefully slit the top of each potato in an oblong oval shape and scoop out as much flesh as possible, placing it in a mixing bowl.
